It's That Lemony Time of Year
This week I got my annual supply of meyer lemons from the Lemon Ladies out in California. No it's not local, but neither is the rice that I use on a regular basis. They are, however, fed with organic fertilizer and grown here in the States - as opposed to being imported from Asia, the Mediterranean, Africa ....
In spirit of all this lemony goodness, I thought I'd revisit some of my previous posts. You see, I'm trying to use up as much of these while they're fresh. Seriously fresh - they were picked on Sunday! So I'm going through all of the lemon recipes I've listed, posted, and saved. I've even got a board devoted to lemon recipes over at Pinterest! I've got my zester and graters at the ready and my ice cube trays cleaned out. The only question is: cake or muffins first?
And there will be lemon curd. Lots and lots of it.

Yea for all things lemon! Hmmm - grated lemon rind? I seem to use a lot of that.
ReplyDeleteI'll be drying the lemon rind to use throughout the year. I don't even bother with the dehydrator since it tends to "cook" the little pieces. If I set them in a mesh strainer they'll dry overnight.

ReplyDeleteI just got meyer lemons too! What do you do with the ice cube trays? Can zest be frozen?
ReplyDeleteI dry the zest and juice extra lemons to freeze for later in the year. I've tried to freeze curd before, but it's not always keen on keeping its shape. I've resorted to keeping curd in a freezer bag or container and scooping a little out at a time. There's nothing like meyer lemonade in July!

Deleteyou should think about buying some meyer lemon trees. we have 2 and had a massive harvest this year. Curd, limoncello, fermented lemons, lemon tart, lemon poppyseed bars...plus we just add the juice to a cup of water for a great winter drink. this sounds like a great deal, but the trees are pretty neat to have around!
ReplyDeleteI've made plans for making a meyer lemon tree the first purchase once we get into a more permanent location. I'm looking forward to being able to pick them as they ripen, but until then I love buying from our current source and stockpiling for the rest of the year. I'm completely envious of your harvests!
